Before dawn the barn fills with the warm breath of the herd and the soft clank of pails. A good milking cow gives her milk steadily, the froth rising white against the sides of the bucket while the calf waits nearby in the straw. Outside, the pasture stretches green under a pale sky, clover thick underfoot and the low, carrying sound of cattle drifting across the morning fields.
