About French Toast

French toast begins the night before, in a way — a thick slice of bread left to go just slightly stale, ready to soak up a custard of eggs, milk, and a whisper of vanilla without falling apart. The pan goes warm with butter, and when the soaked slice meets the heat it sizzles gently, filling the kitchen with the smell of cinnamon and caramel browning at the edges. A dusting of powdered sugar, a slow pour of maple syrup, and the plate is already the best part of the day.
