About Biscuits & Gravy

Biscuits and gravy is one of the most deeply rooted breakfast dishes in American cooking, born from the frugal, resourceful kitchens of the South and the Appalachian backcountry. A proper biscuit is built on cold butter cut into flour, handled just enough to stay tender, too much working and the flakiness disappears. The gravy comes together in the same skillet that browned the sausage, cream and black pepper stirred in until it clings to the back of a spoon.
