About Grits & Greens

A Southern table has its own quiet rhythm, grits stirred until creamy, collard greens slow-cooked with a ham hock until the pot likker turns deep and glossy. Fatback renders in the skillet, garlic and onion soften in the drippings, and a splash of vinegar brightens the whole pot at the end. Hot sauce on the side is less a condiment than a requirement.
