Saltwater taffy has been a seaside staple along the American Atlantic coast since the late 1800s, with boardwalks from Atlantic City to Cape Cod perfuming the salt air with vanilla, molasses, and licorice. The candy is pulled and stretched until it turns glossy and light, then twisted into bright pastel ribbons and wrapped snugly in waxed paper.
