About Macaroni & Cheese

A deep casserole dish of baked macaroni and cheese is one of the most beloved things to pull from an American oven, the edges crisped, the center still creamy, the top burnished gold. At its heart is a simple roux of butter and flour coaxed into a velvety sauce with warm milk and sharp cheddar, poured over tender elbow pasta and crowned with breadcrumbs. The smell alone, butter, toasted crumbs, melted cheese, is comfort made visible.
