About Sweet Corn
Pull back the husk and the whole summer comes with it, that grassy sweetness, the pale silk clinging to every kernel, the soft creak of the stalk in a light wind. Sweet corn is a warm-season crop that converts its sugars to starch quickly after picking, which is why a farm stand ear, rushed straight to the pot, tastes so different from anything traveled far. At the height of the season a single stalk carries one or two ears, each one wrapped in its own papery leaves and crowned by the feathery tassel above.
