About Thyme & Rosemary

A bundle of fresh herbs tied with kitchen twine, thyme, rosemary, a bay leaf, maybe a sprig of parsley, is one of the oldest shortcuts a cook has. Dropped into a braise or tucked beneath a roast, it does its quiet work and is lifted out before serving, leaving behind nothing but flavor. The French call such a bundle a bouquet garni, but every kitchen culture has its own version, its own favorites, its own way of reaching for what grows just outside the door.

How to play
