About The Cranberry Sauce

Cranberries grow in low, sandy bogs across the northeastern United States and the Pacific Northwest, and the harvest, when flooded fields turn a deep, rolling red, is one of autumn's most striking sights. On the Thanksgiving table the sauce arrives in a small dish all its own, whether simmered from fresh berries with a curl of orange zest and a whisper of clove, or slipped whole from the can with its satisfying ridges. Either way, that jewel-bright spoonful cuts through the richness of everything else on the plate, tart and sweet at once, unmistakably the season.
