About The Latke

A latke fresh from the skillet is one of the great small pleasures of the Hanukkah table, golden on the outside, tender within, and fragrant with onion and hot oil. The tradition of frying foods in oil during Hanukkah recalls the miracle of the Temple lamp that burned for eight days on a single day's supply. Served with cool applesauce or a spoonful of sour cream, the latke is the dish that draws everyone to the kitchen before the plates even reach the table.
