About The Mexican Kitchen

In a Mexican home kitchen, the day often starts with masa and a hot flat griddle. The corn is first simmered with slaked lime, a process called nixtamalization that goes back thousands of years in Mesoamerica, then ground and patted into tortillas and stacked in a cloth to keep warm. Mole poblano, the dark sauce from Puebla, takes the better part of a day, and every family swears theirs is the right one.
