About Feast of the Seven Fishes

Christmas Eve in many Italian-American homes means no meat, and a kitchen that smells of hot oil, garlic and lemon from the middle of the afternoon. The cooking goes on for hours: baccala soaking in changes of water for days, a pot of linguine with clams, a platter of fried smelts passed hand to hand. Somebody always burns a finger, and somebody always says there should be an eighth fish.
