About Pizza Night
In a lot of houses Friday meant pizza, either a flat box from the corner place with grease spots coming through the lid, or a pan of dough rising under a dish towel on the counter. Pizzeria ovens commonly run somewhere around 600 to 900 degrees, which is why a pie there is done in a few minutes, while a home oven tops out near 500. Pepperoni was the topping that took over American pizza, and the kitchen smelled of oregano and hot cheese while nobody waited for the slice to cool.
