About Hot Cross Buns
Good Friday and hot cross buns have been tied together in England since at least the 16th century, when London bakers were actually forbidden by law from selling them on any other day of the year. The cross on top started as a simple score made before baking to help the dough expand, and only later became the piped white icing line most of us picture today. At their best they smell of cinnamon and clove before they're even out of the oven, and the raisins or currants plump up in the heat until they're almost jammy.
